What I Ate Wednesday, yeaaaah buddy! This day ended up being ridiculously healthy. Let’s just pretend I eat like this all the time and don’t survive largely on on poptarts.
Breakfast
Overnight oats with a swirl of agave, but, drumroll please…I tried something new. I usually throw together my oats, chia seeds, almond milk and cinnamon and am done, but this time I decided to whizz everything in the magic bullet before refrigerating for the night. Results? It was like eating wet bread dough for breakfast. That may sound disgusting. It may have been disgusting. I’ll eat it again anyway.
Lunch
All packed for work! Curried lima beans and tomato, a leftover soy dog (yeah, not the tastiest-looking food), and lettuce and tomato.
Dinner
So much vegetable! So much delicious! Carrot and ginger soup, tomato socca and some canned beets. I love this meal just for how bright it was. (In case you haven’t caught on, I love the obnoxiously bright and colorful.)
Snacks
Soy latte, Apple, Handful of almonds, Mango
Aren’t I just a good eater? I think that means I get a cookie or two this evening. Or maybe that I need to try whipping up the snickerdoodle blondies from Chocolate Covered Katie (they’ve been hanging out on my to-make list for awhile, so it just might be time. For blondies for dinner.).





Your dinner looked yummy. I love beets, but I’m usually in the minority on that one.

I catch a lot of flak for my love of beets as well–but we can overcome the stigma! And it will be worth it…yum.
I think there is an art to blending overnight oats. I know some people blend them before they go in the fridge and again in the morning.. but I have never tried it. (Because I really don’t want to clean my food processor twice.)
Yeah, that’s why I usually don’t blend ‘em at all, I hate getting extra things dirty–but I needed the bullet for other things as well so I thought I’d give it a go. I can’t imagine having blended them again in the AM, I feel like that would have been a sticky mess.

You’re too funny with that oatmeal! It is weird when we want to eat something again even when it’s categorically not tasty at all!
That tomato socca looks divine! I have been seeing it all over the place and think I need to put it on my experimental cooking list.
Ohh, definitely give socca a try! I was finally brave enough to give it a go–and it’s my new favorite food. Really easy to experiment with, too.
Thanks for the comment- it was just one of those days! I try to eat heathly too but the bad stuff just tastes to good to pass up!
I don’t know how I managed to stay so healthy, treats ARE too good to pass up (and is life worth living long without them??)–they must not have passed my way this day

I’m with you on sometimes eating things that might seem totally bizarre but I find to be really addictive. Wet bread dough sounds spectacular to me.
Soy dogs just never manage to look very…appetizing. Bizarre foods are the best, I definitely have to give this another go to form a better opinion, I was mostly just baffled about it this morning

HAHA wet bread dough. Your food looks good… except, you know, the soy dog. I don’t think they ever look nice though, but they sure are yummy
Also I just realized that it’s been probably ten months since I last had a soy latte. IT’S BEEN FAR TOO LONG.
I have yet to come across an attractive soy dog. Oh, well. I will eat and enjoy anyway! And TEN MONTHS without a latte? Ohh, I start to wonder what’s wrong with the world if I miss a week
