More frozen treats from my isolation vacation…
I tackled the voluminous ice cream recipe from Chocolate Covered Katie. I failed to find the “creaminess,” maybe I can blame that on a lack of proper blending tool, but I did manage to find the “iciness.” I followed the basic recipe but threw in cinnamon and a packet of instant coffee. I can’t say it’s a new favorite (and it’s definitely no “ice cream”), but it was a nice dose of sweet frozen coffee goodness.
Yes, it’s in a wineglass. Everything is classier in a wineglass.
I won’t be home until tomorrow, at which point I will grace this blog with a real post (not just books and vegan ice cream attempts…although, does life really need anything more?).

I had the same experience you had, but I like your idea of coffee.. cause a coffee flavored slushie sounds awesome now that it is hot out!
Iced coffee is always a great hot afternoon treat (plus it keeps me from those 2pm naps…)
Your vacation keeps getting better and better, even if it doesn’t result in “ice cream.” Maybe you could just call it iced coffee; that’s totally accurate.
That is–and then I wouldn’t expect it to be ice cream, and could enjoy more for what it is…
Everything IS classier in a wineglass. A few days ago I made a really delish sesame sweet potato hummus, but because I used sweet potatoes and not yams, and lentils instead of chickpeas, it turned out to be the ugliest dip ever. I took pictures of it in a wineglass, and I wouldn’t say it’s pretty or classy, but it’s an improvement.

I’ve made something similar to this but, I add stevia and guar gum. The stevia sweetens it up and the guar gum makes it a little creamier! Or add a frozen banana. That makes it super creamy!
Hmm, I’ve never used guar gum, sounds like I might need to experiment! And I usually put bananas in my frozen treats, but sometimes I want things to not have that hint of banana taste (although much of the time I do…yummm, bananas.)
You are right! I sometimes put my oatmeal into the wineglass and it is so “chic” to dig in the spoon
