Well, I haven’t joined the WIAW crowd for awhile, but I decided to do so this week–while breaking all the rules. A month that’s supposed to feature snacks? Whoops–here’s just one complete meal. Inspired by a cabinet full of spices and a trip to the farmer’s market.

Moroccan Fava Beans in Tomato Sauce
Based off of this recipe (and my first time ever cooking fava beans! I do realize you’re supposed to double shell them, but I’m lazy and I also hate waste–the hull is perfectly edible and tasted great).
And, well, this didn’t help squash my dream of going to Morocco, that’s for sure…

You should give it a go! These all ended up being super-simple recipes, and I was prepared for way more time in kitchen.

Your fava bean and tomato sauce dish looks wonderful! I am craving marinara so badly right now and this just amped up the craving a few notches. Yum!
And this was even better than marinara! Unless somewhere sells Moroccan-flavored marinara. I’d be all over that.

Yum! Morocco would be so incredible both in sight and in taste! I had fava beans for the first time in Italy. So good!

Mmm those carrots look fabulous! I love how these ideas came from the spices from a Farmer’s Market, one of the best things about summer and fresh local food!
I would also love to go to Morocco! Sometimes I don’t bother double podding my fava beans either
It seemed like a lot of work for not a lot of benefit–the pods were still very tasty! And I liked the extra texture they gave.
Haha it’s safe to say that visiting Morocco is on your bucket list

Those carrots look so good! I don’t think I have had Moroccan food … but it all looks good!
You should definitely give Moroccan a try, the flavor combinations are so good–often a hint of sweet combined with rich spices but all in savory dishes. And the recipes I find are always really healthy, as if it couldn’t get any better…
