The laziness level involved in all of this week’s recipes really reflects my overall laziness level this week. While I (and my garden) are glad it’s finally raining again, endless gray days (okay, three gray days) leave me with little incentive to do more than curl up with a good book.
Despite this, and while I scarf a banana and a pile of almonds on mornings I hit the gym, I’ve been getting (slightly) more deluxe on my off days with a return to my really quick bread recipe. Nothing like warm, fresh bread-for-one dunked in PB and a little bit of agave nectar. It’s like a super tall pancake. Or like a big, soft English muffin. Or like bread that takes 1.5 minutes to make.
Really Quick Bread
Ingredients
- 1/4 c buckwheat flour
- 1 (rounded) T protein powder
- 1t baking powder
- 1/4 c almond milk
Stir together in a microwave-safe bowl. Microwave for 1.5 minutes. Loosen with a fork and pop out of bowl. Enjoy.

You should definitely try buckwheat flour! It’s a different taste/texture, but I love it. And it makes some spectacular pancakes and muffins if you like dense, earthy and hearty breakfast foods.
You weren’t kidding. I love fast breakfasts but I am so boring really. I eat the same thing every morning – oatmeal. The add ins change but I love it too much to veer too far away.
I somehow left my oatmeal kick behind–I think it’s because it has been SO hot here that I’ve been up for any slightly cooler alternative.

I haven’t tried it with other flours–it would be worth experimenting, though. It might not hold together as well/be as dense with lighter flours, but could still work.
There is nothing wrong with quick breakfasts. I throw everything into a blender, blend, drink, and then grab a slice of bread on the way out the door. Keepin’ it classy.
I’m waiting for the day smoothies satisfy my hunger, because they are definitely the quickest way to go.
They only last me maybe 2-3 hours at best if I don’t add a bunch of oatmeal to thicken them or I supplement them with bread, nuts, eggs…something!
Wow that is fast…and a great nut butter vehicle hehe! Do you think this would work in an oven? My mom is totally against microwaves because of the radiation (anal much) so we’ve never owned one…which meant I missed out the joys of microwave popcorn when I was growing up
! My go-to quick breakfast is overnight oats…all I have to do is stir in protein powder & peanut butter & I’m good to go!
I’m sure it would, but it would definitely take much longer, probably muffin-baking time (20-ish minutes?). And oh man, stove-popped popcorn is WAY better than microwave, you definitely didn’t miss out!
Lately I feel as though I have been running around like a chicken with it’s head cut off in the mornings (yes, I know you have chickens). I think this recipe will make my mornings less hectic
Haha, I know the feeling! That’s why I love anything that takes less than five minutes to put together. Longer than that and it’s just not going to happen, or something else that does need to happen won’t.
