It’s always a challenge to make seitan look good visually. But then again, would a hunk of meat look any better? Baked seitan remains my preferred form of seitan, but I think I’m mastering the crockpot version as well. Recipe follows.
Slow Cooker Seitan
2 cups Vital Wheat Gluten
1 1/4 cups broth
A few tsps of Italian seasoning, Mrs. Dash or other herbs of choice
Mix the gluten and seasoning, then add the water. Stir, then knead. Let it rest about ten minutes. Knead again. Rest again. Cut into 6 somewhat even pieces. Dump around 8 cups of broth/water/liquid of choice (I like to use miso paste and water for this–considerably cheaper than buying broth, plus the result is delicious!) into your crockpot, add the seitan pieces. Cook on low for around 8 hours.
If not using right away, refrigerate the finished result in the cooking liquid.
