I had never heard of Socca. Turns out, it’s water and chickpea flour. Can’t get much healthier than that, right? Gluten-free, low cal, whopping amounts of protein. Recipe came from spabettie, although I had some canned tomatoes to use up, so I blended those with water as the liquid (hence the bright orange color). I’m not sure it made a difference in taste, but I feel better not having wasted that half a can of tomato. Great as a bun-like-thing for a veggie burger or just plain with some soy cheddar melted on top.
