Quinoa pilaf! It involves, well, quinoa. Plus spinach, golden raisins, toasted almond slivers and some spices (turmeric, cumin and ground coriander). Cook a cup of quinoa with the spices, toast some almond slivers in the meantime, thaw some frozen spinach (or steam some fresh) and then throw it all together. I can’t really get any more specific with the recipe than that. Pilaf is pretty much the most easy-going food to make. Muffins and more below.
I also made some Oatmeal Raisin Muffins. These are based off of this recipe, except I threw in an extra tbsp of flax and ignored the egg replacer, used agave instead of sugar and tossed in some walnut pieces. And…more golden raisins (the uniting ingredient!). Super healthy and a great breakfast (and afternoon snack, and dessert…).
