Guess what? It’s Wednesday! Which means another What I Ate Wednesday!

Breakfast

Banana buckwheat muffins with fresh blueberries and a big pile of PB to dunk the muffins in.

Lunch

A beet burger with a side of salad (cucumber + corn + kalamata olives + balsamic vinegar). This also may have been accompanied by an iced coffee.

Dinner

Leftover socca pizza, baked eggplant slices and Italian nutritional yeast sauce for dipping.

Other

Pink lady apple for a snack (is there any other kind of apple?), a few almonds and a bowl of oatmeal with almond butter for dessert. Yes, weird dessert for this gal who loves her cookies and semi-sweet items. I was just craving almond butter and had nothing else to put it on.
