Disappeared for a day or two–whoops! I’ve been feeling a bit under the weather. Not quite sick, but on that line between okay and not so okay. So I took it easy this weekend (except for the four hour panic attack that was a Paranormal Activity 1 & 2 marathon) with naps, reading and soup. Lots of soup.

Sweet Potato Curry Soup

  • 2-3 cooked and peeled sweet potatoes
  • 3t curry powder
  • 2t ground coriander
  • 1t cumin
  • 1/2t turmeric, optional
  • Veggie broth

Add the sweet potatoes and spices to your blender, add enough veggie broth to get your desired thickness. Pour into a pan and heat, serve with bread or socca or be really adventurous and scoop it up with some fufu.

This soup is warm, filling and the perfect combination of a little sweet and a little spicy. The perfect maybe-I’m-sick-but-in-denial food, or great on any chilly gray day.
