Today’s What I Ate Wednesday? Eating in the round!
Once it’s summer, or even spring, I promise I’ll start taking pictures with an actual camera again.
Breakfast
Tortilla spread with PB, two clementines. And some pineapple juice drank the classy way–straight from a can of pineapple chunks. Am I too honest on this blog? Perhaps.
Lunch
Quinoa and pea pilaf.
Snacks
Vega shake after breakfast, a handful of dates/dried figs/almonds after lunch, and another PB tortilla after dinner.
Dinner
Wait–is that cheese? Real cheese?
Yes, I broke bad and ate cheese for the first time in…since I was in Africa. Why? Because I’m going to Costa Rica, and so much of being in another country is the food. I will remain vegetarian for the trip, but I don’t expect (or necessarily want) vegan to be an option while there. I’m not going to go crazy with it, but if there is cheese or an egg in a dish, I will eat it. The reason for last night’s cheese? I wanted to make sure I could eat it, and decided three days before departure was enough time to recover if my body decided to, uh, “rebel” against dairy.
P.S.–Cheese isn’t nearly as good as I remember.
And since we’re supposed to be focusing on veggies for this month’s WIAW entries, I’ll have you know–I ate the entire bag of brussels sprouts that I roasted. The ones pictured above were all that were left by the time I finished putting together the rest of my dinner, found my camera and managed to take pictures.
I roasted brussels sprouts last night too and couldn’t stop eating them, even after dinner, so good. I think you have such a good attitude about eating on your trip, it will allow for more fun instead of stressing out over each and every meal. I take it you had mozzarella? If you want some good cheese try bleu cheese or feta on a salad, something you can really taste, those are my favorite!
I actually went for a sharp white cheddar. I was waffling between that and the smoked gouda–I should have gone gouda, it used to be my favorite!
I wouldve paid good money to see you chugging pineapple juice from the can. That is seriously classic!
What can I say, I have style ;D
I drink juice from fruit cans too…it’s all well and good until it starts to dribble down your chin! Easier than wasting a clean glass though 😉
And when the fruit shifts position, you get splashing/surprise fruit in the face too. It’s a challenge…but yeah, I’ll save not have to wash that extra glass!
Roasted brussel sprouts are so addictive! I don’t blame you for demolishing the bag, I would’ve done the same thing heehee 😉
There’s no way to stop eating them! They’re the addictive candy of the vegetable world.

I have a friend who switches to vegetarian when she’s on trips, too. It’s just so much easier in the long run.

Brussel sprouts are fantastic and I don’t blame you for eating all of them, but i would have been one gassy fool after haha (gross TMI)

They don’t bother me too much, but OH, I ate way too many dried figs the other day (because they are delicious!) and then had to isolate myself for a while…
I love your WIAW themes! I also love any breakfast that can double up as pudding! It must have been strange eating cheese again but good plan to make sure you can – you must be so excited about the trip 🙂

I ate an entire bag of asparagus that I roasted earlier this week 🙂

As long as it’s not canned fish, it’s totally acceptable to drink can juice! I really respect your approach to food in terms of being open minded to new cultures and foods! Just outta curiosity, what cheese did you go for??
Eww fish juice, haha. And I went for a sharp white Wisconsin cheddar.

My friend who had been vegetarian for years went to Spain for 4 months. She spent the first few weeks sick as a dog because even veggie soups had meat broths.
I’m still a fan of cheese. But I do tend to splurge on the expensive stuff when I get it.
And brussel sprouts never all make it to the plate. They are just too perfectly pop in your mouth sized.
