While I sit and wait anxiously for Friday–and the house inspection and property assessment–I thought I’d talk about making eating extra difficult. How? By cooking for my roommate.
I am, no news here, vegan. My favorite roommate eats primal. While a (healthy) vegan diet shares a lot of the same concepts as a primal diet (although neither will ever admit it)–cooking for the enemy is a challenge, to say the least. Unless we’re both eating a plate of lettuce or a handful of nuts, our diets are going to be at odds. I don’t eat a lot of refined flours or sugars, but I do love legumes and my oatmeal for breakfast. He doesn’t eat dairy, but he does love giant steaks and plates of eggs and bacon.
We have a tradition of going to (trashy action) movies and sneaking in cookies or other homemade treats. Because really, why eat $5 Skittles when you can have healthier, tastier and cheaper treats? Last night was my turn to pay for tickets/make the treats.
I went with coconut macaroons. I used Katie’s four-minute macaroon recipe (a slight misnomer, as they do take 15 minutes to bake). I subbed 2T almond meal for the 1T regular flour, but those were the only adjustments I needed for a veganΒ and primal movie treat. And these most certainly were a treat–creamy buttery-seeming soft center, chewy coconut outer layer, and overall sweet deliciousness.
And for those who are wondering, we saw Chronicle, which was not at all the movie I was expecting, but I enjoyed it nonetheless. (Next up: John Carter.)

I’m always trying to get Jimmy to eat tofu and he just doesn’t like it. He always tries to get me to eat steak and I don’t like it (too much chewing… I’d rather slurp broccoli soup!). The cookies sound really good π
Mmm, broccoli soup! I’ve got to admit though–these macaroons involve quite a lot of chewing, turns out shredded coconut is tough (but delicious!) stuff π

On Thanksgiving this year, I hosted and cooked for 8 people, including myself. That mix included yankees & southerners, celiacs & wheat lovers, and picky & adventurous eaters. It was pretty stressful for me!
Now THAT would be a challenge! Two people with picky diets is hard enough…
What fun! I’ve cooked for family members that are Gluten Free, Soy Free and Dairy Free. Plus a friend who has serious fish and nut allergies.
Ohh, I have no idea what I’d do if I had nut allergies…
Those macaroons look good! My husband is pretty creative with making primal meals but I’m always on the look out for snack recipes like this. π It’s funny you mentioned this today. I was literally just reading another blog post comparing vegan and primal/paleo.
I’d love to read that post–the two make for an interesting comparison as they really can be quite similar, but if all you read is MDA you’d think vegans were all wasting away in a pile of malnutritioned death…
I love the title of this post – and I love the look of those macaroons; anything involving coconut is a winner in my book but the texture of those looks amazing.
I had to make a cake to order a couple of months ago, which had to be free of gluten, dairy, soya and chocolate! Slight mission but I’m just glad they weren’t allergic to nuts too, as I used ground hazelnuts to make it; I’d have been a bit stumped otherwise π
The texture IS amazing, it’s a combination of everything great that coconut can be. And wow, I have no idea how you came up with that cake! I’ve tried doing some baking with nut flour, but outside of cookies I can never get it to come out quite right.
I will eat probably anything with coconut. That’s all I have to say about that.
These sound like a decadent treat..you had me at coconut (and 4 minutes)- going to check out this recipe! The only thing I can think to add (if Katie hasn’t already) is some cocoa powder…Bounty macaroon anyone?
Ooo, these WOULD be good with cocoa! Or with some fun flavor extracts mixed in. And they really aren’t that decadent–fairly low in sugar, and coconut’s all good for you, so not too shabby in the health department (for a dessert, that is).

I was just thinking last night that I wanted to find a good macaroon recipe. I’m going to try this one! And yes, I could see how meeting both primal and vegan needs in one recipe would be a challenge!
Definitely give it a try! I hadn’t had a macaroon in years, and these were just right. Yumm.
Ahhh love the action movie ritual. And also macaroons. Anything with coconut gets me all hot and bothered.
