Sticking with the theme of healthy, simple and wholesome foods like yesterday’s granola, I bring you a family classic (via my mom) that can hardly be called a recipe. If you want to use up some fresh garden (or farmer’s market) tomatoes and herbs and want dinner in the time it takes to heat up water and boil pasta…well, give this fresh and flavorful recipe a go.
Fresh Pasta Sauce
Ingredients
- 4-ish Fresh tomatoes, diced
- Fresh basil, minced
- Half an onion, diced
- Two cloves of garlic, diced
Throw it all in a bowl. If you’re patient, put it in the fridge for an hour or so to chill and for the flavors to mix. If you aren’t patient (I’m not), go ahead and dump it on fresh, hot pasta right away.
Mmm, with simple recipes like this, the flavors really must shine through. The fresh garlic and fresh basil have got to blow you away!

In the summer there is absolutely nothing better than a simple tomato-basil combo! I actually just at that on my eggs. 🙂

Mmm, it really is. Especially when it’s ten million degrees out here and I don’t want a meal that’s ALL hot, but still tastes fresh.

I never think of putting cold things on hot things like this, but that does look delicious. Maybe I could eat it and pretend that it’s actually summer here and not monsoon season. Though if I do that, I may as well pretend that I’m sitting on a balcony somewhere in Italy. I think that might be a plan.
I love the hot/cold combo of this. And yeah, this is definitely a meal that contributes to Italy-imaginings–the simple flavors and ingredients are perfect Italian-balcony or piazza eats.

Oh, I hope you do! It’s the perfect way to use fresh tomatoes (other than…just eating a whole fresh tomato. Not going to admit how few actually make the journey from garden to house and aren’t eaten along the way).

It really is the perfect summer food. Plus tomatoes in the winter (or even grocery store tomatoes) can’t even begin to compare to garden-fresh! I’m totally in love with having access to my own veggies. I’m freezing TONS so that I won’t have to give it up all at once in the fall.
Yet easy yet so tasty too! 🙂
