I don’t like fall. I know, I know–it’s half the world’s favorite season. But do you know what fall means to me? It means winter is coming, the weather is cold and miserable, my garden is dying and it’s time to bundle up and hide indoors for the next what feels like an eternity.
But fall food? I love it. Sara and I got to comment-chatting about pumpkin spice lattes…and I thought, why wait for the season I like second-least? Why not now? So I bring you pumpkin spice latte…pudding. For hot summer days.
Pumpkin Spice Latte Pudding
- 1/2 (cold) baked sweet potato (or, you know, pumpkin)
- 1 scoop vanilla protein powder
- 1T flaxseed
- 1t vanilla
- Cinnamon, nutmeg and ginger galore
- 1t instant ground coffee (I use Trader Joe’s decaf, it’s actually pretty good)
- 1/8t guar gum (or use less milk)
- 1C almond milk
If you only have plain protein powder, add extra vanilla and your sweetener of choice. Blend. Eat your summertime fall treat. And might I recommend topping it with a good dollop of my still-amazing vegan whipped cream?

Fall is my favorite season OF.ALL.TIME. I get so excited about it that it’s scary. Pumpkin lattes, pumpkin bread, pumpkin cinnamon rolls, pumpkin beer, football, PUMPKIN BEER AT FOOTBALL GAMES OMG and now you’ve got me too excited to work. Thanks for that.
Oooh, okay, I’ll give fall pumpkin bread and football as well, but that still doesn’t mean it makes me happy! If only the year could go 3/4 summer, 1/8 fall, 1/8 spring, and just cut that winter part out altogether…
Awesome! And yeah, even though I love fall, I HATE WINTER. So much. I hate spring more, though, because it always seems like it’s never hot enough or cool enough for what I’m wearing so I’m always gross and sweaty. It’s kinda too warm, so I take off my sweater but then I’m freezing. Then it’s kinda cold so I put it back on, but then it gets a bit hot and I’m gross again. You’d think fall would be this way as well, but it never seems to present these same problems.
Related to your recipe, do you think I could skip the flax? Or add something else? What about chia seeds maybe?
You could definitely do a chia sub/add more gum/use less milk. It’s really there to add some thickness, so anything else that serves a similar purpose would probably work. If you want more sweet, adding some banana instead of the flax would work…ohhh, now I want a banana-sweet potato-spice latte. And that’s how I feel about A/C in summer–95 degrees outside, have to dress for that, then A/C set at -5 indoors, gotta bring thirty layers for that. Embrace the heat, people of TN, and (don’t) cool it with so much A/C…
haha – i love that we were on the same wave length with out posts today. love the idea of making it into a pudding! i’d add a little real pumpkin in there too… pumpkin pie latte pudding! π

Ahhhhhhhhh pumpkin spice lattes! This is happening next week, absolutely! I’ll just thin it out a bit so its drinkable. I’m already toting way too much stuff to the office, and I absolutely don’t give myself enough time to sit down with a proper breakfast in the morning [sleep is precious!].
Fall is my absolute favorite time of year. It’s not too warm, not too cold. I can wear sweaters and boots and it just smells awesome. Then it rains, a lot, and then I miss the sun, so I’m trying not to wish fall to hurry up too much. The weather finally dropped from 95+ to 75+. That’s way more my style. Portland summers cannot be beat!
Yeah, this is totally my breakfast #2 most mornings at the office (except out of a Magic Bullet cup rather than a fancy mug, haha). Would be easy to thin–just omit the gum (and maybe the flax) and add a little more milk and you should be good!
And I love the 95+, haha. I think I need to move to Arizona or somewhere in that area.
I hear Arizona is lovely for that kind of devil heat. I’ve never been, but my grandparents lived there when they were younger. 90+ degrees in the middle of the night makes me want to cry. Mexico was like that. So maybe you just need more tropical vacations (hint, hint)!
PS – Totally have been making green oatmeal cookie smoothies this week. Delicious!
I LOVE fall! As cheesy as it sounds, watching the leaves change color is breath-taking! Weather-wise, it’s perfect too: not hot that I’m sweating yet not so cool that I need to layer up! Also my taste buds seem to love fall produce: pumpkin, squash & apples..mm!

Hey Allie, I have a confession. I love fall but I hate winter. I did actually find myself thinking, when it was actually chilly this morning, “Oh no, it’s coming.” My other confession is I don’t like pumpkin. I don’t like pumpkin pie, even. I know! Pumpkin bread, scones, muffins are ok. I love squash. I just don’t get it. I’m a total mutant but I’m sure your pudding is great for the pumpkin crowd!
Haha, if you’ll notice–I totally used sweet potato instead of pumpkin. Pumpkin is okay-ish in my book, but I like sweet p so much more! (Although I’ll eat anything in scone form…)

Exactly my view! I don’t even want to think about autumn and *shudder* winter, not impressed!
