This wasn’t going to be a theme, but now it is. Last #strangebutgood link up? Sweet sweet-potato buns. This week? Cool and creamy avocado-based buns. Why?
Because my avocado don’t want none unless it’s in buns, hon!
I couldn’t resist. But then again, I didn’t really try.
Avocado Buns for Burgers
While last week’s sweet potato buns were inspired by Sarah’s sweet potato bread, this week’s buns are inspired by Lucie’s green pancakes and Laura’s cookie-filled reminder that you can bake with avocado. The ingredients are deceptively simple, but the result is rich and creamy with that avocado tang.
- 1/4 avocado
- 2 egg whites
- 1/2t baking powder
- 1/4c oatmeal, blended into flour
Preheat oven to 350, line a loaf pan with parchment paper. Blend all your ingredients together. Pour/spread into an even layer in your loaf pan. Bake for 20-25 minutes. Cut in half. Burger time!
I used handy-dandy frozen Costco turkey burgers again, but I have a feeling these buns would be pretty darn spectacular with a black bean burger. And then dunked in BBQ sauce. Damn, why didn’t I think of that earlier?
Oh well, topped with honey mustard wasn’t a too shabby option either.
