I leave for Jamaica tomorrow. So that means there’s tons to do today. Thank goodness I love lists (and that Meghan reminded me that posts based on lists are a-okay).
What, you don’t have to remind yourself to pack your jewels and actually shampoo your hair for once? I want to live in your organized, streamlined mind. I mean, I can’t even remember if I’m writing in all caps, print or cursive long enough to write one list.

And while there’s much to be done, I still managed to find time for the most important step in preparing for a trip…making cookies.
Apple-Almond Palegan Cookies
(That’s short for “Paleo AND Vegan.” So they are, by definition, also gluten-free, grain-free and dairy-free.)
- 1c almond flour
- 1/4c coconut flour
- 1/4c flax seeds, ground to flour
- 1/4c sunflower seeds or other nut or seed, ground to flour
- 1t baking powder
- sprinkle of salt
- 1.5t cinnamon
- 1/4t salt
- 1c applesauce
- 1/4c liquid sweetener of choice (I used agave)
- 1/3c melted coconut oil
Heat oven to 325. Stir your dry ingredients together, add in the wet, then drop scant 1/4c of dough onto a baking sheet lined with parchment paper. Press flat and shape. Bake 25 minutes. Makes ~10 cookies.
As usual, I gave these the ol’ coworker test, and they got rave reviews and disappeared in minutes. Dense, moist, chewy and delicious. Even despite having ridiculous health stats (per cookie): 5g protein, 9g carb, lots of healthy fats and nutrition and good for you stuff, only 160 calories.

The cookies look good, especially since they are full of goodness. I’m the same way about using a list to pack! I have to remind myself to bring everything from my shampoo to my purse. Have fun in Jamaica! If you’re going to be in Negril, go to Rick’s Cafe and jump the cliff! It’s fun!

I just make sure I have a toothbrush and clean undies–I figure the rest can be reworn, isn’t that important, or I can buy something cheap while I’m there!
My life would seriously crumble into a sobbing heap if not for lists of many different kinds. I’m a little too prideful to write “shampoo” on my To Do list…which means my hair is a little, um, greasy today. oops.
I’m so excited for your trip! It’s been horrendously cold here in Pittsburgh and I keep dreaming about tanktops and sunshine.
Also, I always bake PB cookies before travelling. The stress makes me crave something sweet, but I like to keep it (somewhat) healthy and they at least have a little protein in them. I wanna try your apple cookies! We just picked up our first jar of coconut oil (hooray!) and I can’t wait to bake with it.
I used to omit the shampooing, but yeah, I’d then realize I’d gone over a week. Once every five days is my sweet spot…Now shaving? There’s definitely a reason that one ended up on the list. I mean, it’s winter after all…
SO cold here too, I can’t wait for shorts and flip-flops! And cookies on an airplane with a Starbuck’s caffeine-punch of a treat 😉
Coconut oil is probably my favorite thing ever–definitely try roasting some sweet potato or squash chunks with coconut oil and cinnamon, amazing!
Do I really need to tell you to have a great time? If I tell you to NOT have a great time, would you do that, too?

I started off trying to mash primal and vegan together, and just couldn’t figure out how that one would work. Priegan? Maybe.

I have all those ingredients on hand, they look great. I tend to like crunchy cookies so I’ll probably bake them longer. Have a wonderful vacation. Can’t wait to see the photos and be jealous 🙂
