This is a What I Ate Wednesday, but it is also a What I Ate Wednesday-and-the-Week-or-So-Before. Why? Leftovers. I love my leftovers. Few things taste worse the next day, and most taste much much better. Plus it means no cooking. I like the path of least resistance.
Breakfast
Leftover coconut flour/banana pudding-bread with homemade chia-blueberry jam (based off of this recipe–although I used fresh blueberries and left out that fake sugar nonsense.)
Lunch
Leftover everything on top of lettuce. This is a pretty standard lunch for me on a workday. What do I have in the fridge? Old stir-fried green beans, old eggplant sort-of tagine, old plum tomatoes. Voila! Lunch.
Dinner
Leftover curry lentils with leftover socca for dipping. I didn’t take a picture, because while yellowish-brown smush is delicious, it is not photogenic.
Snacks
A roommate brought home a cantaloupe left over from a family get-together. I won’t admit how much I ate. (All of it.) Also snacked on blueberries that are passing their prime and scraped some (a lot) of almond butter out of the jar that’s been in my fridge for weeks (I buy the utili-size from Costco, I wouldn’t want to mislead you into thinking a regular jar would last multiple weeks in my fridge). And of course I had a soy latte. That wasn’t a leftover–it was just delicious.
Yeah!! I’m so glad you made it and it’s good to know it works just as good with fresh blueberries. I just tried chia seeds + fresh strawberries yesterday and had to use 1 1/2 Tbsp. of chia seeds with 2 cups of fresh strawberries to get the “jam like” consistency.
Stevia is the ONLY no-calorie sweetener I use in the jam recipe and it comes from a plant. I stay AWAY from fake artificial sweeteners YUK!!
Oh, strawberries would be delicious! And I absolutely love this idea for jam–thank you for sharing it! It’s so fresh and healthy. I didn’t have to increase the chia seed amount, but I think blueberries are fairly high in natural pectin which I’m sure helps gel everything together.
Love cantaloupe! Btw, the veggie burger is DR. Pragers brand…I get a huge box from Costco.

Soy lattes are the bomb!! I always eat yucky looking food and never want to post it as well lol, it tastes great though 🙂

i don’t know how anyone can resist! I ate at least 3/4 of a cantaloupe right after already eating breakfast…tooo good.
That jam looks awesome. I agree fake sugar = meeeeh. Except diet coke, I’m such a hypocrite.
We all have our weaknesses 😀 Trader Joe’s has an amazing diet gingerale that I have a hard time avoiding. But at least I’m aware it’s not that good for me–does that count?

Exactly! I love cooking, but NOT every day, and especially not right after getting home from work.
leftovers rule! when school is on I eat leftovers like 75% of the time, especially leftover chilli’s etc which taste better the next day anyway!

Yay for leftovers! I love to cook, but sometimes it’s nice to take a break. Besides, leftovers are the only thing fueling me through college. 😉

Am I the only one that doesn’t like cantaloupe? There is something about it that just doesn’t sit well with my taste buds. It makes me a little sad though as it always looks and smells so yummy!

I LOVE having leftovers! As much as I enjoy cooking, it feels soo good to come home from work and just pull out my leftovers and pour a glass of wine!! They also are my lunch every day!!
