With all this new house business I’m about to be broke and I’ve been incredibly busy, but I still want to take care of myself. So I bring you a….What I Ate (Cheaply, Quickly and Healthily) Wednesday.
I have a stock of noodles, flours and freezer contents to use before the move. To this I added a stash of well-priced freshness:
I made breakfast:
Really quick bread (buckwheat flour + protein powder + milk + microwave) with a side of really quick “baked” apple (pink lady apple + cinnamon + microwave).
I know I tend to rant against over-processed vegan substitute foods…but just look at the price of a week’s worth of lunch (when quickly heated up with a lingering jar of home-canned tomato sauce, asparagus and broccoli):
More veggies came together with need-to-be-used soba noodles at dinner for another round of avocado alfredo.
And don’t forget snacks of more apple, carrots and almonds.

quick, healthy, and cheap is my life. We make chilli a lot, which most consists of canned goods but it’s easy and relatively healthy.
Mm, yup, chili is a fast and healthy favorite of mine, too. Plus if you end up with surprise extra time, it’s a great excuse for cornbread 😉

I find it amazing AND tasty! I have plans to post a recipe in the very near future. It’s worth a try if nothing else, since if it’s a flop, you’ve wasted a total of 1.5 microwave minutes.

Wow that bread is pretty impressive! One of my go-to quick yet super cheap meals is baked beans on a jacket (or sweet) potato…and it tastes pretty dark delicious!
I love beans on sweet potato! One of my favorite ways to use up leftover bean-based chili is to put it on top of baked sweet potato. And I promise there’s a recipe for that bread coming soon, it’s too easy and awesome NOT to share.
I haven’t been eating cheaply enough lately. Which is an issue, because the budget is tight. I find that a pot of beans (baked beans, chili, minestrone soup…whichever) is cheap and delicious and lasts all week.
Beans ARE the way to go–especially dried. You can get 2lb bags of dried beans for practically nothing.

i love making ‘baked’ apples like that in the microwave. pink ladies are the best to use. in fact, i just added a microwaved pink lady with cinnamon over a sweet potato for lunch a few hours ago! great minds, great minds.

I’ve had disastrous results from bread/cake in the microwave. Does that stop me? No. I just cringe while I see the timer countdown.
My latest cheap meal is cereal. Rice milk + Whole Foods’ Protein & Fiber. It’s totally lacking veggies, but it’s perfect for when I need to shovel something in and get back to work.
Yeah, I tried a cupcake recipe once that came out…gummy?…and had sort of stayed away, but I’ve been making this quickbread every other morning or so, and it’s come out just right each time (except the mornings where I stumble around and forget to put in important ingredients).
It is so great to use up all your freezer / fridge ingredients in such a healthy way! I love fresh salads which are healthy, and cheap 🙂
I love to do crock pot things like chili made with rice, beans and veg – super cheap and easy!
You always manage to make really tasty sounding food, even on a cheap budget 🙂 My meals tend to be quite cheap because I don’t really eat meat which is expensive but obviously neither do you! I like to whip up easy veggie dishes in my wok, things like stir-frys, easy sauces full of extra veg added in like mushrooms, courgettes, and peppers, and cheap curries 🙂
