You know what this morning was? 45 degrees. You know what makes me happy? Not that. But these colder mornings do mean I get to make a WIAW dedicated to fall breakfasts–and to the peanut butter people who have inspired them! (And thank goodness it’s a good habit to eat breakfast–because there’s no way you’re keeping me away from food in the morning.)
Does anything taste sweeter than sweet potatoes you dug up yourself? A protein-ified version of Kylie’s sweet potato-peanut butter freezer cookies do.
Does anything taste better than a tart, crisp, local apple? Using those apple to (finally) make Laura’s famous PB&Aggs.
Does anything complement apples better than peanut butter? Sarah’s peanut butter pancakes with microwave-baked apples.
Does anything look prettier than hot pink peanut flour-beet-banana-omelets inspired by Katie’s banana omelets? Yes. But dang, these taste good.
And don’t think I don’t have ten (twenty) more breakfast ideas bookmarked.

Featured my first post-vegan attempt at them yesterday π But I have to say…runny yolks? I don’t love ’em. I prefer my poached eggs more like hard-boiled eggs, haha.

The girly girl in me loves the look of that omelet! As you’ve reintroduced Greek yogurt into your diet, please give overnight oats a go. My go-to combo is:
Oats, soy milk, yogurt, chias and cinnamon soaked overnight…in the morning mixed with protein powder (flavour is up to u), peanut butter & almonds..and fruit if u so please!
I’ve tried overnight oats in the past and wasn’t a fan–but I’ve never made them with greek yogurt! Definitely have to give that a try (maybe even tomorrow morning π ) Thanks for the awesome suggestions!

I would totally eat those pancakes. I’m a little sad I just finished my last beet, actually.
I’m down to the last of bag of frozen beets from earlier this summer π¦ And you should check out that peanut butter pancake recipe–it’s all peanut-flour and egg-white based, so it’s a super-protein breakfast that you can either make pretty much carb-free or you can sub the flax for oat flour and coco milk for almond milk (which I did) for a great fat-free pre-workout meal. It’s like eating peanut butter on toast…but a pancake.
Frozen beets? WHY didn’t I think of that???
You just sold me on the ‘cakes. As if I need one more thing to add to my “to make” list.
I had some extras from my garden that I knew would go bad, so I chopped them up and tossed them in the freezer just to see. Worked great–although they do get a little soft after freezing/thawing, so they’re really best in dishes where you’d puree them. I’d assume the frozen food aisle would have them too? I’ve actually never looked to see if that’s a regularly sold item! I bet Whole Foods would have them if nothing else.
And yeah, my list is out of control…

I think it’s just the magic of that recipe! I usually make the ugliest/weirdest looking pancakes (I mean, just take a look at that “omelet,” haha).
OH MY LANTA I want to eat ALL of this!! I’ve had my eye on pretty much all of these recipes for weeks but just haven’t had time to make them….would you mind if I just lived in your kitchen and mooched for leftovers?? haha π

You always have the most creative breakfasts. I’ve broken my smoothie tradition this morning and kind of tried that eggs/oats thing you did a little while ago. It turned out…interesting. I don’t know if it helped that I did 2 eggs + oats in the blender first before cooking it. When you made your two egg whites + egg + oats, how much oats did you use? I’m going to try it again but not blending the oats and eggs together and see if that helps.
I think I’ve done it with both 1/3 and 1/2c oats–but definitely didn’t blend first, just soaked in a little water for maaaybe five minutes first.
Alright, I’m trying it again in the morning. Fingers crossed.

The answer is yes, I would eat that color omelet π I have had green pancakes before, so I ought to add in another funky colored breakfast food! The sweet potato PB cakes are a recipe I surely plan to make!
It’s not good is it, it was 3.5C (38F) here yesterday morning and it looked almost frosty, not impressed! I’m leaning towards porridge in the mornings rather than the youghurt and fruit I’ve been having all summer – but your breakfasts look amazing! I’ve had beetroot and apple pancakes before and they were gooood π
